Glorious Greek Salad


This Greek salad dressing, We promise you, is glorious!

SERVES: 4
PREP TIME: 10 Minutes
COOK TIME: 5 Minutes

Ingredients

1/2 whole Head of romaine lettuce, washed and dried, chopped
3 oz. baby salad spinach
3 whole medium tomatoes, quartered
1/2 whole cucumber, peeled, seeded and sliced diagonally
1/2 whole white onion, thinly sliced, separated into rings
1 whole red pepper cut in strips
6 oz. Feta cheese, cubed
12 whole kalamata olives, pitted
1 tsp. chopped fresh oregano or marjoram
1/4 cup extra virgin olive oil
1 tablespoon fresh lemon juice
1 pinch salt
1 pinch ground black pepper

Directions

	Step 1: Mix lettuce and spinach; place in a large bowl. Add tomatoes, cucumber, onion and bell pepper. Arrange cheese and olives on top and sprinkle with oregano or marjoram.

	Step 2: To prepare Lemon Dressing, whisk together lemon juice, olive oil, salt and pepper. Spoon dressing over salad and serve.
